Ingredients

For the Dough

  • 2 cups whole wheat flour
  • 1 tsp salt
  • 2 tbsp gram flour (besan)
  • ½ tsp carom seeds (ajwain)
  • 1 tbsp ghee
  • Water (as needed to knead the dough)
  • 2 tsp oil

For the Filling

  • 2 large potatoes, boiled and grated
  • 1 inch ginger, grated
  • 2-3 green chillies, finely chopped
  • 1 tbsp chopped fresh coriander leaves
  • Salt to taste
  • ½ tsp coriander powder
  • 1 tsp red chilli powder
  • ½ tsp cumin powder
  • 1 tsp garam masala
  • ½ tsp dried fenugreek leaves (kasuri methi)
  • ¼ tsp dry mango powder (amchur)

For Cooking & Serving

  • Ghee (for roasting)
  • Butter cubes (for garnish)
  • Yogurt (to serve)
  • Pickle (to serve)

Process

Step 1: Make the Dough

In a large mixing bowl, add whole wheat flour, gram flour, salt, ajwain, and ghee. Mix well. Gradually add water and knead into a smooth dough. Apply oil on top and let it rest for 15-20 minutes.

Step 2: Prepare the Filling

Mash the boiled potatoes well in a bowl. Add ginger, green chillies, coriander leaves, salt, coriander powder, chilli powder, cumin powder, garam masala, dried fenugreek leaves, and dry mango powder. Mix everything until well combined.

Step 3: Stuff and Roll the Paratha

Take a ball of dough and roll it slightly. Place a spoonful of the potato filling in the center. Seal the edges carefully and roll it out gently into a flat paratha.

Step 4: Cook the Paratha

Heat a tawa (griddle) on medium flame. Place the rolled Aloo Paratha and cook one side till brown spots appear. Flip and apply ghee on both sides. Cook until golden and crisp.

Step 5: Serve Hot

Top with a cube of butter and serve hot with yogurt and pickle.
