Mallika Biryani Ingredients:
- Handful of Coriander Leaves
- Handful of Mint Leaves
- 9-10 Green Chilies
- 1 Tsp Cumin Seeds
- 1.5 Tsp Fennel Seeds
- 1 Tsp Shahi Jeera
- 2 Tsp Peppercorns
- 3-inch Cinnamon Sticks
- 15 Cloves
- 1 Tsp Coriander Seeds
- 5 Cardamom Pods
- 1 Star Anise
- 2 Bay Leaves
- 2 Onions, thinly sliced
- 1 Tbsp Ginger Garlic Paste
- 2 Tbsp Kasuri Methi (Dried Fenugreek Leaves)
- 4 Tbsp Oil
- 2 Tomatoes, chopped
- 1 Tsp Turmeric Powder
- 500 gms Chicken, cleaned and cut
- 1 Lemon, juiced
- Salt to taste
Step-by-Step Instructions:
Step 1: Make the Green Masala Paste
- Add coriander leaves, mint leaves, and green chilies to a blender.
- Grind to a smooth paste and set aside.

Step 2: Dry Roast Whole Spices
- In a pan, dry roast:
- Cumin seeds,
- Fennel seeds,
- Shahi jeera,
- Peppercorns,
- Cinnamon sticks,
- Cloves,
- Coriander seeds,
- Cardamom,
- Star anise,
- Bay leaves
- Cool the spices, then grind to a fine powder. Keep aside.

Step 3: Fry the Onions
- Heat 4 tbsp oil in a deep pot.
- Add sliced onions and fry until golden brown.
- Take out half and keep for garnishing.

Step 4: Sauté Masala Base
- In the same oil, add ginger garlic paste. Sauté until raw smell disappears.
- Add chopped tomatoes and cook till soft.
- Mix in the green masala paste, ground spices, kasuri methi, turmeric powder, and salt.
- Cook until the oil separates from the masala.

Step 5: Cook the Chicken
- Add chicken pieces and coat well with masala.
- Cover and cook until the chicken is fully cooked and tender.

Step 6: Add Lemon Juice
- Once cooked, squeeze in lemon juice for tangy flavor. Mix well.

Step 7: Prepare Rice for Biryani
- Parboil basmati rice with a pinch of salt. Drain and keep aside.
Step 8: Layer the Biryani
- In a heavy-bottomed pot:
- Layer half the chicken masala.
- Add a layer of rice.
- Repeat with the remaining chicken and rice.
- Garnish with the reserved fried onions.
- Step 9: Dum Cook the Biryani
- Seal the pot with foil or dough and place the lid tightly.
- Cook on low heat for 15-20 minutes to infuse the flavors.

Step 10: Serve Hot
- Gently fluff the biryani.
