  • 1 medium size Cauliflower (फूलगोभी), cut into florets
  • 1 Capsicum (शिमला मिर्च), roughly chopped
  • ½ inch Ginger (अदरक), sliced
  • 2-3 Garlic cloves (लहसुन), chopped
  • Water (पानी) as needed
  • 5 medium Potatoes (आलू), cubed
  • 1 Carrot (गाजर), peeled & chopped
  • ⅓ cup Green peas (हरी मटर)
  • Salt (नमक स्वादानुसार)
  • 2-3 tbsp Butter (मक्खन)

For Tempering (तड़का लगाने के लिए)

1 cup Onion (प्याज), chopped

  • 1½ cup Tomato (टमाटर), chopped
  • 2-3 Green chilies (हरी मिर्च), chopped
  • 2-3 tbsp Butter (मक्खन)
  • ¼ cup Oil (तेल)
  • ½ tbsp Ginger garlic paste (अदरक लहसुन का पेस्ट)
  • Salt (नमक स्वादानुसार)
  • ¼ cup Fresh tomato puree (ताज़े टमाटर की प्यूरी)
  • 1 medium Capsicum (शिमला मिर्च), chopped
  • 1 tbsp Degi red chilli powder (देगी लाल मिर्च पाउडर)
  • 2 tbsp Butter (मक्खन)
  • 1 tbsp Pav bhaji masala (तैयार पाव भाजी मसाला)
  • Boiled & mashed vegetables (उबली सब्जियाँ)
  • 1 tbsp Butter (मक्खन)
  • 2 tbsp Pav bhaji masala (तैयार पाव भाजी मसाला)
  • Water (पानी), as needed
  • ¼ tsp Sugar (चीनी)
  • 1 tbsp Coriander leaves (धनिया पत्ता), chopped

  • 1 tbsp Butter (मक्खन)
  • A pinch of Degi red chilli powder (देगी लाल मिर्च पाउडर)
  • 2 Ladi Pav (लादी पाव)

For Masala Pav (मसाला पाव के लिए)

  • 1 tbsp Butter (मक्खन)
  • Prepared masala (भाजी वाला मसाला)
  • 2 Ladi Pav (लादी पाव)

For Garnish (सजावट के लिए)

  • Chopped Onion (प्याज)
  • Lemon wedge (नींबू की फांक)
  • Butter pav (बटर पाव)
  • Coriander sprig (धनिया पत्ता)

How to Make Street Style Pav Bhaji at Home (With Images)

Easy Mumbai Pav Bhaji Recipe with Masala Toasted Pav

1. Boil the Vegetables
In a pressure cooker or large pot, boil potatoes, cauliflower, carrots, green peas, capsicum, a little salt, and water. Cook until soft and mash them with a potato masher. Set aside.

2. Heat Butter & Oil
In a deep pan or tava, heat 1 tbsp butter and 1 tbsp oil on medium flame.

3. Add Cumin & Onions
Once hot, add cumin seeds and let them crackle. Add chopped onions (you can use a food processor for fine chopping).

4. Sauté Until Golden
Cook the onions for 4-5 minutes till golden brown. Then add chopped ginger, garlic, and green chilies. Sauté for a minute.

6. Add Tomato Puree & Water
Pour in fresh tomato puree, ¼ cup water, and a pinch of salt. Cover and cook for 6-8 minutes until tomatoes are soft and well-cooked.

7. Add Spices
Now add pav bhaji masala, Kashmiri red chili powder, red chili powder, and the remaining salt. You can also add ½ tsp sugar for a balanced flavor.

8. Add Kasuri Methi
Sprinkle 2 tsp kasuri methi (dried fenugreek leaves) for that street-style aroma.

9. Mix Boiled Vegetables
Add the mashed vegetables to the masala mixture. Mix everything thoroughly.

Use a potato masher or an immersion blender to blend everything into a smooth mixture (optional – you can keep it chunky too).

15. Toast the Pav
